Milan’s bone gold

Osso buco is a Milanese braise: veal shank with bone marrow, cooked slowly in white wine, tomatoes and vegetables until the meat falls from the spoon. The bone inside is not a side note but the whole point.
The joy is understated: the marrow is scooped out with a small spoon, and the soft fat is the dish’s secret delight. Anyone who orders osso buco and leaves the marrow uneaten does not yet understand Milan.
