Mascarpone

Mascarpone is related to ricotta but richer, creamier, more seductive. It comes from Lombardy, from the city of Lodi, and was originally made in winter from the cream of the milk.

Without mascarpone, no tiramisù. The famous layered dessert was invented in Treviso after 1960, and mascarpone was the key: only it has enough fat to let the ladyfingers soak gently.
