‘Nduja is not a sausage in the strict sense but a spreadable paste of pork, fat and plenty of peperoncino. It melts over pizza, pasta or plain bread, and its burn is gentle.

It comes from Spilinga in Calabria and was invented out of necessity: lesser cuts of meat were cooked down, spiced hot, and made to keep for months. Within a few years it became a trendy specialty of the international food scene.
