Pizza marinara is not named after the fish but after the patron saint of sailors, Santa Maria della Libera. Tomatoes, garlic, oregano, olive oil: the oldest pizza of Naples, with no cheese at all.

Legend has it that sailors ordered the quick sauce upon returning home, making the pizza a harbour dish. Today you taste a true marinara in Naples to understand what pizza is: a concentrate of five things, none of them cheese.
